1 cup of quinoa
1-2 tbs olive oil
1 chopped white or yellow onion
2-3 cloves of crushed garlic
1 package of frozen chopped green, yellow, red peppers, or one chopped pepper of each color
1 can of diced tomatoes
2 cans of drained black beans
1-2 packages of taco seasonings
Daiya vegan cheese, cheddar
Tofutti sour cream, to garnish
chopped cilantro, to garnish
1 diced avocado, to garnish
shredded spinach, to garnish
your favorite salsa, to garnish
Your favorite tortilla chips
Prepare quinoa according to package directions and set aside. In a large sauce pan over medium/medium-high heat, drizzle olive oil. Saute onion until they start to soften, but not quite brown. Add crushed garlic and saute 1 minute. Add peppers and saute 1-2 minutes. Add drained beans, diced tomatoes, and taco packets. Mix together on medium heat until warmed through. Add quinoa and mix together.
Add as much of the mixture to a plate of tortillas chips, top with cheese and microwave until cheese starts to melt. Daiya cheese will not melt completely, so just heat until soft and starts to melt. Top with sour cream, avocado, cilantro, salsa, and shredded spinach. Serve warm and enjoy!
This recipe can also be used in other dishes such as, taco salads, burrito or taco filling, or in enchiladas!
